Diples
Ingredients (for 30 diples)
For the Diples
- 5 eggs
- 0,750kg flouρ
- 1/2 tea spoon “300”salt
- 2 Τable spoons sugar
- 1 1/2 vanilla extract
- 1 sachet baking powder
- Extra Virgin Olive Oil Maxouli for frying
For the Syrup
- 2 jars honey 300 (300 thyme honey for rich syrup or 300 vanilla honey for smooth sweteness
- ¼ glass of flower water
- ¾ glass of water
- lemon peel
For garnish
- chopped walnuts
- cinnamon
We mix the flour with the salt
Then we beat the eggwhites in a mixer and then the yolk seperatly. We mix them all together and then we add it altogether with sugar . We add the vanilla extract and the salt .
We slowly pour the flour into the egg-sugar mixture and we mix by hand so the dough is not too soft or firm .(We do not use a mixer for the dough because we don’t want it to become too firm)
We use non-stick paper in order to lay out the dough we put olive oil in our hands so the dough doesn’t stick on them. With a rolling pin we lay out thin shhet of dough. We cut the sheets into strips.
We fry the strips, as we fry the strips with the help of a fork we wrap them into a cylinder shape. When done we strain them from the oil and we let them cool.
For the Syrup
We boil the honey , the water, the flower water and the lemon peel together for about 2 minutes, We pour the syrup over the diples while it is still hot. Then we garnish with with the walnuts and cinammon
